Spiced Pineapple Oatmeal

Ingredients

  • 1 c old fashioned rolled oats
  • 1 c water
  • ½ c pineapple juice
  • ¾ c pineapple tidbits
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp allspice
  • ¼ tsp ground clove
  • 1 c cashew milk yogurt
  • 1 tbsp  flaxseeds

Instructions

  • In a small pot, add the water and bring to a light boil
  • Stir in the oats and lemon juice. Reduce heat to a simmer (medium-low), stirring frequently 
  • As the oats begin to tighten, about 3m, add in lemon zest and gently fold in the pomegranate
  • After 5m, remove from heat and place the lid on the pot for about 3m
  • Serve and garnish with pomegranate molasses or honey drizzle
