Ingredients

  • 6 eggs
  • 1/3 C cashew milk
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • 1 medium parsnip diced
  • 1 shallot diced
  • 2 cloves garlic diced
  • 1 piece of ginger grated

Instructions

  • Preheat oven to 350℉
  • In a blender combine eggs, milk, salt and pepper. Can optionally whisk instead
  • Heat a 10” cast iron skillet over medium high heat.
  • Add olive oil and saute the parsnip and shallot, stirring occasionally
  • Once the parsnip has become tender, add in garlic and ginger
  • Once the garlic is fragrant, add in egg mixture. Stir to combine for about 30s.
  • Cook on stovetop until you start to see the edges set ~5-7m.
  • Once edges set, add to oven and bake for 16-18m. Remove from oven and serve
