Whisk eggs, parsnips, shallots, herbs, bake for a golden Parsnip and Shallot Frittata, a flavorful blend perfect for brunch.
Parsnip and Shallot Frittata
Ingredients
- 6 eggs
- 1/3 C cashew milk
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
- 1 medium parsnip diced
- 1 shallot diced
- 2 cloves garlic diced
- 1 piece of ginger grated
Instructions
- Preheat oven to 350℉
- In a blender combine eggs, milk, salt and pepper. Can optionally whisk instead
- Heat a 10” cast iron skillet over medium high heat.
- Add olive oil and saute the parsnip and shallot, stirring occasionally
- Once the parsnip has become tender, add in garlic and ginger
- Once the garlic is fragrant, add in egg mixture. Stir to combine for about 30s.
- Cook on stovetop until you start to see the edges set ~5-7m.
- Once edges set, add to oven and bake for 16-18m. Remove from oven and serve
