Ingredients

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • ½ tsp turmeric
  • ½ tsp cumin (if using whole, toast and grind, or use powder)
  • ½ tsp coriander (if using whole, toast and grind, or use powder)
  • ½ tsp black pepper
  • 2 cups red lentils
  • 3 cups water
  • 1 14oz can of diced Fire Roasted Tomatoes (not drained)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest, chopped fine
  • 1 tsp salt
  • Fresh cilantro or dill to garnish

Instructions

  • In a dutch oven, heat oil over medium heat, add in the onion and sauté for 3-5m
  • Add in Lentils, water, tomatoes and their liquid, bring to a boil and reduce heat to low to simmer, covered, until lentils are tender, about 25-30m
  • Once tender, squeeze in lemon juice and stir in the zest and salt. Taste for seasoning and adjust if necessary
  • Serve with fresh herbs to garnish
