Simmer lentils, tomatoes, and a burst of turmeric in this one-pot wonder, creating a tantalizingly spiced Turmeric and Tomato Lentil dish, ideal for a nourishing meal.
One Pot Turmeric and Tomato Lentils Soup
Ingredients
- 1 tbsp olive oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- ½ tsp turmeric
- ½ tsp cumin (if using whole, toast and grind, or use powder)
- ½ tsp coriander (if using whole, toast and grind, or use powder)
- ½ tsp black pepper
- 2 cups red lentils
- 3 cups water
- 1 14oz can of diced Fire Roasted Tomatoes (not drained)
- 1 tbsp lemon juice
- 1 tsp lemon zest, chopped fine
- 1 tsp salt
- Fresh cilantro or dill to garnish
Instructions
- In a dutch oven, heat oil over medium heat, add in the onion and sauté for 3-5m
- Add in Lentils, water, tomatoes and their liquid, bring to a boil and reduce heat to low to simmer, covered, until lentils are tender, about 25-30m
- Once tender, squeeze in lemon juice and stir in the zest and salt. Taste for seasoning and adjust if necessary
- Serve with fresh herbs to garnish
