A delightful breakfast option, Lemon Pomegranate Oatmeal combines creamy oats infused with tangy lemon zest and juicy pomegranate kernels. Finished with a drizzle of sweet pomegranate molasses or honey.

Ingredients

  • 1 c old fashioned rolled oats
  • 2 c water
  • 1 pomegranate kernels
  • 1 lemon, zested and juiced
  • pomegranate molasses or honey to garnish

Instructions

  • In a small pot, add the water and bring to a light boil
  • Stir in the oats and lemon juice. Reduce heat to a simmer (medium-low), stirring frequently 
  • As the oats begin to tighten, about 3m, add in lemon zest and gently fold in the pomegranate
  • After 5m, remove from heat and place the lid on the pot for about 3m
  • Serve and garnish with pomegranate molasses or honey drizzle
