Fig Garden Salad
Ingredients
- 4 c arugula, loosely packed
- 6-8 quartered (or substitute with dried figs, soaked and sliced)
- 1 c cherry tomato
- ¼ c pistachios, roughly chopped
- ½ c fresh corn cut from 1 cob to roast
- 1 tsp olive oil
- ½ tsp garlic powder
- ½ tsp chili powder
- 1 garlic clove, minced (optional)
- 2 tbsp balsamic vinegar
- 3 tbsp olive oil
- salt & pepper to taste
Instructions
- In your emulstir salad dressing mixer to combine your minced garlic, balsamic vinegar, olive oil, salt and pepper and mix well. Refrigerate until ready to use.
- Heat a cast iron skillet over medium heat. Drizzle with olive oil and add the corn. Cook for a few minutes stirring occasionally. Add garlic, salt, and pepper. Stir together until slightly roasted 6-8 minutes. Remove and allow to cool.
- Toss arugula, figs, cherry tomato, pistachios, red onion, and corn in a large bowl. Drizzle with dressing and toss well.Â
