Ingredients

  • 4 c arugula, loosely packed
  • 6-8 quartered (or substitute with dried figs, soaked and sliced)
  • 1 c cherry tomato
  • ¼ c pistachios, roughly chopped
  • ½ c fresh corn cut from 1 cob to roast
  • 1 tsp olive oil
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • 1 garlic clove, minced (optional)
  • 2 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • salt & pepper to taste

Instructions

  • In your emulstir salad dressing mixer to combine your minced garlic, balsamic vinegar, olive oil, salt and pepper and mix well. Refrigerate until ready to use.
  • Heat a cast iron skillet over medium heat. Drizzle with olive oil and add the corn. Cook for a few minutes stirring occasionally. Add garlic, salt, and pepper. Stir together until slightly roasted 6-8 minutes. Remove and allow to cool.
  • Toss arugula, figs, cherry tomato, pistachios, red onion, and corn in a large bowl.  Drizzle with dressing and toss well.
