This recipe provides a good source of lean protein with the chicken. The vegetables contribute to overall health, digestion, and provide antioxidants that support the immune system. The herbs bring a freshness but also cilantro also contains vitamins A, C, and K, as well as antioxidants. A delicious meal we enjoy regularly that you can feel good about. NOT to mention the leftovers are even better the next day.
Creamy Coconut Curry Chicken with Vegetables
Ingredients
- 2 c shredded rotisserie chicken
- ½ head broccoli, chopped (about 1.5 cups)
- 1 red bell pepper, cut into strips
- 4 oz sugar snap peas (handful)
- ½ c chopped cilantro
- ½ shallot, finely chopped
- 3 garlic cloves, minced
- ½ tsp fresh grated ginger or 1 teaspoon ground ginger
- 1 tbsp curry powder
- juice of 2 limes
- 16 oz full-fat coconut milk
- turmeric, to taste
- olive oil and toasted sesame seed oil
- salt and pepper, to taste
- red pepper flakes (optional for heat)
Instructions
- In a large skillet or pot over medium heat, add 1 tablespoon of olive oil and a dash of toasted sesame seed oil. Add the shallot, minced garlic, and grated ginger. Sauté for 2-3 minutes until fragrant.
- Season with salt, pepper, turmeric, curry powder, and red pepper flakes (if using). Stir to combine.
- Add the lime juice, red bell pepper strips, chopped broccoli, and sugar snap peas to the skillet. Toss well to coat the vegetables in the seasoning mixture. Cook for about 4 minutes, stirring occasionally.
- Pour in the coconut milk and add the chopped cilantro and shredded rotisserie chicken. Stir everything together and bring to a simmer.
- Reduce the heat to low and let the curry simmer for about 8 minutes, allowing the flavors to meld together and the vegetables to cook through.
- Serve the creamy coconut curry chicken and vegetables over rice. Optionally, garnish with sesame seeds, sliced green onions, or additional fresh cilantro.
