Chopped Salad
Ingredients
- Spinach
- Arugula
- Hardboiled egg
- Radish
- Cherry tomatoes
- Carrots
- Red Onion
- Fire roasted corn
Instructions
- In your emulstir salad dressing mixer or a small bowl, combine the olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined. Refrigerate until ready to use.
- Chop the spinach and arugula into bite-sized pieces. Slice the radishes thinly. Halve the cherry tomatoes. Grate or thinly slice the carrot. Thinly slice the red onion. (or throw them on a big wooden cutting board and go to town chopping vertically and horizontally with a large chefs knife)
- In a large salad bowl, combine the chopped spinach, chopped arugula, chopped hard boiled egg, sliced radishes, halved cherry tomatoes, grated carrot, sliced red onion, and fire roasted corn.
- Drizzle the dressing over the salad ingredients in the bowl. Toss gently with salad tongs or two large spoons until everything is evenly coated with the dressing.
- Serve with crumbled feta cheese or goat cheese if desired.
